The Quinta Lucía tourism project, will be located in the Cevallos canton, Ecuador, is a tourism venture aligned with sustainability. The objective of the study was to design a sustainable management model and procedure. The study was descriptive, at a theoretical-synthetic, inductive-deductive and systemic analytical level. The sample consisted of 367 inhabitants, 30 tourists and 15 employees of the Departments of Tourism and Culture of the Municipal Gad, to whom a survey was applied. The findings show that sustainable management according to the staff had an acceptable level with a maximum average of 4.4667; the minimum mean values in the inhabitants survey were 2.8883 (medium level). Tourists would like traditional gastronomic services 63.3% (n=19) and the objective of their predominant visit 56.7% (n= 17) was to taste gastronomy. The model was designed, based on the institutional frameworks, developing an organizational structure for a particular destination. The model proposed strategies: 1. Social coordination of participation networks; 2. Financial economic management for investment; 3. Service planning and innovation; 4. Marketing and strategic marketing; and 5. Strengthening the quality of tourist services, which contain applicable objectives in different areas that give an integral character to the intervention.
